oat and buckwheat pancakes

I love pancakes y'all. Sometimes I make them at midnight tbh. You never know when you're going to have a pancake craving! This recipe is great because I literally throw everything in my Vitamix and within a few minutes I have a stack of pancakes! Thats a blatant lie. I am too inpatient to wait for them all to cook to even make a stack. You can probably imagine how upsetting it was to watch this stack in the photo go cold and moderately soggy. Anyways, pancakes.


2 bananas
3/4 cup nut milk
1 tsp vanilla
1 tsp psyllium husk

Blend all of the above in your blender or food processor. If you don't have either, mash well with a fork. 

1/2 cup oat flour
1/2 cup buckwheat flour
1/4 tsp salt
1.4 tsp baking powder
1/4 tsp baking soda
1/2 tsp cinnamon

Heat some coconut oil up in your frying pan and cook on medium heat until you see little air bubbles, thats when you know its time to flip. I typically make this amount for myself and have one or two extra pancakes, so if you're making for 2 or for the fam, double or triple the recipe! You may also need to add a little more nut milk depending on consistency. Use your judgement!
