Beet Hummus

INGREDIENTS

2 MEDIUM SIZED ROASTED BEETS
1 CAN OF ORGANIC CHICKPEAS
THE JUICE FROM ONE SMALL LEMON OR 1/2 OF A LARGE
1-2 CLOVES OF FRESH GARLIC
1 TBSP TAHINI
1 TBSP OLIVE OIL
1/4-1/2 TSP SALT
1/4 TSP CAYENNE

DIRECTIONS

Wrap beets in tinfoil. Roast at 400 degrees for 40 mins to an hour. Let cool, peel, then cut into chunks. Rinse your chickpeas, then throw everything into your food processor and blend! Garnish with fresh dill or another fresh herb of your choice.
